Roast Duck

roastduckIngredients:

whole picked ducks, salt, chopped apple, 3 or 4 bacon slices per duck.

Season whole ducks lightly with salt.  Stuff each duck with apples and wrap with bacon.  If ducks are skinned wrap entirely in bacon.  Bake 350 degrees until tender (approximately one and one half hours).  Brown on boil until bacon covering is crisp.  Allow to cool and remove all meat from bones.  Chop bacon and add the cooked apple to broth.  Mix well.  Can be served as a separate dish or over rice, preferably wild rice.
